VACANCY: HEAD CHEF
Location: Lilongwe Golf Club, Lilongwe
Position Overview:
We are seeking a culinary expert who manages a kitchen’s day-to-day operations and staff, they should have a passion for food and cooking, as well as managerial skills, and be able to multitask and work well under pressure. The successful candidate will be responsible for overseeing all food and beverage functions to ensure the efficient operation of the club and will be reporting to the General Manager of Lilongwe Golf Club.
Key Responsibilities
- Menu creation: Developing menus for the day and season, and working with other chefs to plan, describe, and photograph dishes
- Ingredient selection; Ensuring the quality and freshness of ingredients
- Staff productivity: Making sure that staff are performing to required standard managing the waiters to efficiently serve customers
- Kitchen management; Overseeing the kitchen’s finances and resources, and ensuring compliance with health and safety regulations
- Operational efficiency; Inventory turnover
- Cost control; Food and beverage cost percentage
- Staff management: Hiring, training, and supporting kitchen staff, and setting and monitoring performance standards
- Quality control; Ensuring the quality and consistency of food production, and dealing with any food-related concerns
- Customer satisfaction: Ensuring customer satisfaction by addressing any issues that may arise
- Order accuracy; Monitoring incorrect orders and food that has gone to waste percentage
- Coordination; Coordinating with other front-of-house teams, such as the restaurant manager, front of house manager, or bar manager
- Waste reduction; Reduce food waste by a specific percentage compared to previous periods
- Health and safety standards; Make sure the kitchen is passing all health and safety standards
- Revenue growth; Monthly and yearly revenue growth on agreed percent
- Profit margins reports; Achieve profit margins agreed
Qualifications and skills
- Those with a degree in culinary arts will be highly preferred those with a Diploma in culinary art will be considered from a reputable institution.
- Over 5 years’ experience as a Chef in a big and busy kitchen.
- Leadership and communication: Head chefs should be able to motivate and inspire their team and build strong relationships with staff and customers.
- Creativity: Head chefs should be able to design and plan dishes and menus that combine flavors and culinary styles.
- Culinary knowledge: Head chefs should have advanced culinary skills, including food preparation, flavor profiles, and other cooking best practices.
- Attention to detail: Head chefs should be able to work in fast-paced environments and have a keen eye for detail.
- Delegation: Head chefs should be able to delegate multiple tasks.
- Organizational skills: Head chefs should be able to manage multiple tasks simultaneously.
- Physical stamina: Head chefs should have physical stamina and dexterity.
- Sense of taste: Head chefs should have an excellent sense of taste and a refined palate.
