Job brief
Manage kitchen operations, including inventory, budgeting, and cost
control. Uphold and enhance food safety and sanitation practice.
Responsibilities
- Ensuring that kitchen staff adhere to quality, hygiene and cleanliness standards.
- Staying up-to-date with culinary trends and kitchen processes.
- Monitoring quality and price of goods from suppliers to ensure cost effectiveness and the required quality of produce is supplied at all time.
- Planning buffet, snack and special function menu.
- Ensuring portion control is maintained and wastage is minimized.
- Dealing with suppliers and ensuring that they supply quality goods at affordable prices
- Making sure attendance records are completed daily in accordance with resorts requirement.
- Managing the inventory and ordering stock as needed.
- Overseeing the maintenance of kitchen equipment and organizing repairs when needed.
- Handling staff issues, such as sick leave and attendance, and taking disciplinary action when necessary
- Developing new dishes and overhauling menus to attract more clientele.
- Ensuring that guests receive excellent service and enjoy their culinary experience.
- Being aware and implement all statutory regulations effecting kitchen health and safety.
Job Requirements and qualifications
- Diploma in food production.
- Ability to perform well ina high-pressure and fast-paced environment
- Solid financial acumen, including the ability to manage the budget.
- Excellent organizational skills to ensure smooth running of the kitchen
- Strong leadership skills to effectively nmanage and motivate kitchen staff.
- Creativity and superior culinary skills to create exceptional dishes.
- Business acumen to make sound decisions regarding things like menu prices and kitchen processes.
